Refined Kappa carrageenan is a natural linear sulfated polysaccharide extracted from red algae such as Chondrus crispus, Kappaphycus alvarezii, and Eucheuma cottonii through processes of alkali treatment, water washing, gel cooking, filtration, Salting-out reaction, and pressure filtration. It possesses a unique ability to form gels.
Refined Kappa carrageenan can form high-strength thermally reversible gels and has multiple functionalities including gelling, stabilizing, thickening, water retention, and emulsification. It is widely applied in products such as desserts, meat products, dairy products, pet food, and biochemical products.
